Ingredients:
- 4 large bell peppers
- 500g beef mince
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes (400g)
- 1 cup cooked rice
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Grated cheese (optional)
Method:
1. Preheat oven to 180°C.
2. Cut tops off bell peppers and remove seeds.
3. Cook onion and garlic in a pan until softened.
4. Add beef mince and cook until browned.
5. Stir in tomatoes, rice, oregano, and basil. Cook for 5 minutes, then season with salt and pepper.
6. Stuff bell peppers with beef mixture, place in a baking dish, and top with cheese if using.
7. Bake for 25-30 minutes until peppers are tender.
