Sausage Pasta

Ingredients:
- 500g Our Cow Grass Fed Beef Honey, Garlic & Herb Sausages
- 375g Pappardelle pasta
- ½ a brown onion, diced
- 3 garlic cloves, minced
- 1 cup chicken stock
- 300ml cooking cream
- Salt and pepper
- A handful of baby spinach
- ⅓ cup parmesan, plus extra for serving
- Fresh parsley, to serve
Cooking Instructions:
- Heat a fry pan over medium–high heat. Add the Our Cow Grass Fed Beef Honey, Garlic & Herb Sausages and cook until browned on all sides and cooked through. Remove from the pan and set aside. Once slightly cool, slice into bite-sized pieces.
- Cook pasta according to packet directions. Reserve ½ cup of pasta water, then drain.
- In the same pan, add the onion and garlic. Cook until the onion is translucent. Add the chicken stock and simmer for 2–3 minutes. Stir in the cooking cream and season with salt and pepper. Simmer for 3-4 minutes or until slightly thickened.
- Add the cooked pasta, sliced sausages, and baby spinach to the pan. Toss until combined, and the spinach has wilted. Add Parmesan and a splash of the reserved pasta water, if needed, to loosen the sauce.
- Top with extra parmesan and fresh parsley to serve.
