Beef and Veggie Sausage Rolls

Ingredients:

- 500g beef mince

- 1 onion, finely chopped

- 1 carrot, grated

- 1 zucchini, grated

- 2 garlic cloves, minced

- 1 tbsp tomato paste

- 1 cup breadcrumbs

- 1 egg

- Salt and pepper to taste

- 2 sheets of puff pastry

- 1 egg, beaten (for egg wash)

Method:

1. Preheat oven to 200°C.

2. In a bowl, mix beef mince, onion, carrot, zucchini, garlic, tomato paste, breadcrumbs, egg, salt, and pepper.

3. Cut puff pastry sheets in half, place mince mixture along one edge, and roll up.

4. Cut into smaller pieces, place on a baking tray, brush with beaten egg.

5. Bake for 20-25 minutes until golden and cooked through.
