Hannah’s Slow-Cooked Beef Massaman Curry

Ingredients
- 1 kg Our Cow Diced Grass Fed Beef
- 2 tbsp vegetable oil
- 1 onion, finely sliced
- 3 tbsp Massaman curry paste
- 400 ml coconut milk
- 2 cups beef stock
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 3 potatoes, peeled and cut into chunks
- 2 carrots, chopped into chunks
- 1 cinnamon stick
- 2 bay leaves
- ½ cup roasted peanuts (optional)
- Steamed jasmine rice, to serve
Method
- Heat oil in a large pan and sauté the onion until soft.
- Add curry paste and cook for 1-2 minutes until fragrant.
- Brown the beef in batches, then transfer everything to a slow cooker.
- Stir in coconut milk, beef stock, fish sauce, sugar, potatoes, carrots, cinnamon stick, and bay leaves.
- Cook on low for 6-8 hours (or high for 3-4 hours) until beef is meltingly tender.
- Just before serving, stir through peanuts (if using).
- Serve hot with jasmine rice and enjoy around the table with family.
