Ingredients:
- 500g beef mince
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 can kidney beans, drained and rinsed
- 2 cans diced tomatoes (400g each)
- 1 tbsp tomato paste
- 1 cup beef stock
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
- Cooked rice (for serving)
- Sour cream and chopped coriander (for garnish)
Method:
1. Cook onion and garlic in a large pot until softened.
2. Add beef mince and cook until browned.
3. Stir in red bell pepper, cumin, paprika, and chili powder. Cook for 2 minutes.
4. Add tomatoes, tomato paste, beef stock, and kidney beans. Simmer for 30 minutes.
5. Season with salt and pepper.
6. Serve with rice, garnished with sour cream and coriander.
