Big Mac Quesadillas

Ingredients:
- 500g Our Cow Grass Fed Beef Mince
- 4 tortillas
- Olive oil
- 4 tsp paprika
- Salt and pepper
- 4 slices of cheese
- 2 cups shredded lettuce
- ½ cup pickles, diced
- ⅓ of a brown onion, diced
Big Mac Sauce:
- ¼ cup kewpie mayo
- 1 ½ tbsp tomato sauce
- 1 tbsp pickles, diced
- 1 tbsp brown onion, diced
- 1 tsp Dijon mustard
- Dash of pickle juice
Method:
- In a small bowl, combine all ingredients for the sauce and set aside.
- Divide the Our Cow Grass-Fed Beef Mince into 4 portions and spread one portion onto each tortilla, spreading it thin. Season with salt, pepper, and paprika.
- Heat a saucepan to medium-high and add a drizzle of olive oil.
- Add the tortilla to the saucepan, meat side down. Cook for about 3-4 minutes or until the mince is cooked through.
- Flip the tortilla, add a slice of cheese, cover, and let it cook for 2 minutes or until the cheese is melted. Remove from the pan and repeat with the remaining tortillas.
- Top with Big Mac sauce, then add pickles, lettuce, and diced onion to one half of the tortilla.
- Fold over the untopped half to make your quesadilla and cut it in half.
