Ingredients:
- 500g beef mince
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes (400g)
- 1 can black beans, drained and rinsed
- 1 packet taco seasoning
- 1/2 cup water
- 8 flour tortillas
- 2 cups enchilada sauce
- 1 cup grated cheese
Method:
1. Preheat oven to 180°C.
2. Cook onion and garlic in a pan until softened.
3. Add beef mince and cook until browned.
4. Stir in tomatoes, black beans, taco seasoning, and water. Simmer for 10 minutes.
5. Fill tortillas with beef mixture, roll up, and place in a baking dish.
6. Pour enchilada sauce over the top and sprinkle with cheese.
7. Bake for 20 minutes until cheese is melted and bubbly.
