Beef Sausage Rolls with Homemade Tomato Chutney

Ingredients:
Tomato Chutney:
- 1 tbsp olive oil
- 1 large red onion, finely diced
- 1 tbsp garlic paste
- 5 tomatoes, finely diced
- ½ cup brown sugar
- ¼ cup red wine vinegar
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Cooking instructions:
- Heat a large saucepan with olive oil over medium heat. Add the diced red onion and cook for 10 minutes or until soft. Add the garlic and cook for 1 minute.
- In the saucepan, add the diced tomatoes, brown sugar, red wine vinegar, and balsamic vinegar, then season well.
- Mix well and let simmer gently for 45 minutes, occasionally stirring, until it reaches a thick, jam-like consistency.
- While the chutney is cooking, air-fry the Our Cow Beef Sausage Rolls at 180°C for 20 minutes.
- Slice sausage rolls, top with a dollop of homemade tomato chutney and enjoy!
