Beef Sausage Rolls with Homemade Tomato Chutney

Ingredients:

Tomato Chutney:

  • 1 tbsp olive oil
  • 1 large red onion, finely diced 
  • 1 tbsp garlic paste 
  • 5 tomatoes, finely diced
  • ½ cup brown sugar 
  • ¼ cup red wine vinegar 
  • 1 tbsp balsamic vinegar 
  • Salt and pepper to taste


Cooking instructions:

  1. Heat a large saucepan with olive oil over medium heat. Add the diced red onion and cook for 10 minutes or until soft. Add the garlic and cook for 1 minute. 
  2. In the saucepan, add the diced tomatoes, brown sugar, red wine vinegar, and balsamic vinegar, then season well. 
  3. Mix well and let simmer gently for 45 minutes, occasionally stirring, until it reaches a thick, jam-like consistency. 
  4. While the chutney is cooking, air-fry the Our Cow Beef Sausage Rolls at 180°C for 20 minutes.
  5. Slice sausage rolls, top with a dollop of homemade tomato chutney and enjoy!
