Garlic Parmesan Steak Pasta

Ingredients:
- 2 x Our Cow Grass Fed Rump Steak
- Olive oil
- Salt and pepper
- 1 brown onion, diced
- 1 tbsp butter
- 1 ½ tbsp minced garlic
- ½ cup chicken stock
- ½ cup cooking cream
- ½ cup parmesan cheese
- ⅓ cup parsley, finely chopped
- 300g rigatoni
Method:
- Drizzle steaks with olive oil and season, using your hands to ensure the Our Cow Grass-Fed Steak is coated evenly. Repeat for both sides.
- Heat a frying pan over medium-high heat and add olive oil. Once the pan is hot, add the steak 2-3 minutes per side or until the internal temp reaches 51°C for medium rare (or cook to your desired liking)
- Remove the steak from the pan and allow it to rest
- Boil a pot of water and cook pasta
- In the same pan used to cook the steak, add butter and sauté the onion over medium heat for about 5 minutes, or until translucent. Add the minced garlic and cook for 1 minute.
- Add the chicken stock and cooking cream, and season with salt and pepper. Cook on medium-high for 2-3 minutes. Reduce to a simmer and add the Parmesan cheese, mixing until it is melted. Add a dash of pasta water to loosen the sauce.
- Add the parsley and cooked pasta to the sauce and mix until combined.
- Dice the steak. Serve pasta in bowls and top with steak, along with some extra parmesan and parsley.
