Y Bone Steak with Moroccan Cauliflower and Crispy Brussels Sprouts

Ingredients:
- 2 x Our Cow Grass Fed Y Bone Steaks
- Olive oil
- Olsson's Saltbush & Mountain Pepper Leaf Salt Rub
- Salt and pepper
Moroccan cauliflower steaks:
- 1 small head of cauliflower
- Olive oil
- 2 tbsp Moroccan seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ cup parmesan cheese, grated
Crispy Brussels sprouts:
- 300g Brussels sprouts
- 1 ½ tbsp olive oil
- 1 tbsp honey
- Salt
Gravy:
- 4 tbsp butter
- 4 tbsp plain flour
- 2 cups beef stock
- Salt and pepper to taste
Cooking instructions:
- Preheat the oven to 200°C and line 2 baking trays.
- Trim the leaves from the cauliflower and slice it into 2-3 thick cauliflower steaks, keeping the core intact so the steaks hold together. Place on a lined baking tray, drizzle with olive oil, and season with the Moroccan seasoning, garlic powder, onion powder, salt, and pepper. Roast for 30 minutes. Remove from the oven, top with Parmesan cheese and return to the oven for 3 minutes or until the cheese is melted.
- Trim the ends from the Brussels sprouts, remove any excess leaves, and chop in half. Drizzle with the olive oil and honey, season with salt, and roast for 30 minutes or until crispy.
- Remove the Our Cow Grass Fed Y Bone Steaks from the fridge 30 minutes before cooking. Pat dry, drizzle with olive oil, and season generously with Olsson's Saltbush & Mountain Pepper Leaf Salt Rub and cracked pepper.
- Heat a frying pan or barbecue over high heat. Cook the steaks for 3-4 minutes per side for medium-rare, or until cooked to your preferred doneness. Transfer to a plate, loosely cover with foil, and rest for 5-10 minutes.
- To make the gravy, melt the butter in a saucepan. Add the flour one tablespoon at a time, whisking as you add it. Add the stock 1 cup at a time, whisking well.
- Stir consistently over medium heat until the gravy reaches your desired thickness. Add more stock if it's too thick.
- Serve the rested Y Bone Steaks with the Moroccan cauliflower steaks, crispy Brussels sprouts, and plenty of gravy.
