Loaded Lamb Nacho Fries

Ingredients:
- 500g Our Cow Grass Fed Lamb Mince
- 1 tsp onion powder
- 1 tbsp minced garlic
- 1 tsp paprika
- 1 tsp dried parsley
- Salt and pepper
- 400 g shoestring fries
- 4 tbsp sour cream
Guacamole:
- 1 avocado
- Juice of ½ a lime
- Salt and pepper
Pico de Gallo:
- 2 tomatoes, diced
- ⅓ cup coriander, finely chopped
- ½ a red onion, diced
- 1 tbsp olive oil
- Juice of ½ a lime
- Salt and pepper
Cooking instructions:
- Preheat your oven to 180°C. Line a baking tray with baking paper and add the shoestring fries. Bake for 20 minutes or until golden.
- While the fries are cooking, heat a frying pan with olive oil over medium heat. Add the Our Cow Grass Fed Lamb Mince and seasonings. Mix and let cook, stirring occasionally.
- Mash up the avocado in a small bowl. Add the lime juice, salt, and pepper, and mix.
- In another bowl, mix all ingredients for the Pico de Gallo.
- Once the fries and mince are cooked, add the mince on top of the fries along with slices of cheese. Place back in the oven for 5 minutes or until the cheese is melted.
- To serve, add the guacamole, Pico de Gallo, and dollops of sour cream.
- Enjoy!
