Crispy Crackling Pork Roast with Homemade Apple Sauce

Ingredients
Pork Roast
- 1 x Our Cow Free-Range Pork Roast
- 1 tbsp olive oil
- 1 tbsp salt
- Black pepper
Apple Sauce
- 4 apples
- 1 tsp fresh lemon juice
- 1.5 tbsp sugar
- 1/3 cup water
- Pinch salt
Air Fried Potato Wedges
- 1.2 kg potatoes, cut into thick wedges
- 2 tbs duck fat
- 1 tbsp fresh rosemary or thyme
- Salt and pepper
Peas & Bacon
- 200 g Our Cow Nitrate-Free Steaky Bacon, diced
- 3 cups frozen peas
- 1 tbsp butter
- Salt and pepper
Method
1. The day before cooking
Pat the pork dry, cover the meat side only with foil, leaving the skin completely exposed. Place on a tray, skin side up, and refrigerate overnight so the skin can dry thoroughly.
2. Cooking day
Remove the pork from the fridge and let it sit at room temperature for 1 hour, keeping the netting on.
3. Apple sauce
Peel, core and dice the apples into small, even pieces. Add apples, water, lemon juice, sugar and salt to a saucepan. Bring to a gentle simmer. Cover and cook for 15 minutes or until very soft. Mash for a rustic texture or blend smooth. Set aside to cool.
4. Slow-roast the pork
Preheat the oven to 130 °c. Line a roasting tray with foil and place a rack on top. Pat the rind dry again. Season the meat side with salt and pepper. Lightly rub the rind with olive oil, then massage salt into the scored skin. Place the pork on the rack, rind up. Roast for 2 hours 15 minutes to 2 hours 30 minutes, or until the internal temperature reaches 55 °c.
5. Potato wedges
Cut the potatoes into thick wedges. Place in a bowl with duck fat, rosemary or thyme, salt and pepper. Toss to coat evenly. Preheat the air fryer to 200 °c.
6. Crackle the pork
Remove the pork, and increase the oven to 200 °c. While the oven heats, carefully remove the netting. Return the pork to the oven once fully heated. Roast for 10-15 minutes, or until the crackling is crisp. Internal temperature should reach 62 – 65 °c.
7. To finish
Air fry the potato wedges at 200°c. For 25-30 minutes, shaking once, until golden and crisp.
Transfer the pork to a board and rest for 20 minutes.
Towards the end of the resting time, cook the bacon in a pan over medium heat for 5-6 minutes, until lightly golden and the fat has rendered. Add the butter, followed by the peas. Cook for 3 minutes, until the peas are warm and bright. Lightly season to taste.
8. Serve
Slice the pork, keeping the crackling attached. Arrange on a platter with the potato wedges, peas and bacon, and serve with the apple sauce.
