Caramelised Onion Sausage Rolls

Ingredients:
Sausage rolls
- 500g Our Cow Grass Fed Beef Mince
- 2 sheets of puff pastry, partially thawed
- 1 egg
- ⅔ cup bread crumbs
- 1 tbsp dried thyme
- 1 tbsp tomato sauce
- 1 egg, whisked
- 3 tbsp sesame seeds
Caramelised onion
- 2 brown onions
- 1 tbsp olive oil
- 2 tbsp brown sugar
- 1 tbsp white wine vinegar
To serve: Tomato sauce
Method:
- Thinly slice brown onions. Heat oil in a fry pan over medium heat. Add onions and cook for 10 minutes or until browned, stirring occasionally. Add the brown sugar and white wine vinegar, mix and cook for 3 minutes or until onions are caramelised, stirring occasionally. Set aside for 5 minutes to cool slightly.
- Preheat your oven to 180°C and line a baking tray.
- Place caramelised onions in a bowl along with Our Cow Grass Fed Beef Mince, egg, bread crumbs, dried thyme, and tomato sauce. Season with salt and pepper and use your hands to combine.
- Cut each pastry sheet into quarters. Place a generous handful of the mixture along one edge of the pastry and roll to enclose the filling. Cut each roll in half.
- Place on the lined baking tray. Brush with egg wash and sprinkle with sesame seeds.
- Bake for 35-40 minutes or until pastry is golden brown.
- Enjoy!
Tip: If you have any leftovers, reheat in the air fryer!
