Ingredients:
- 500g beef mince
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 2 tbsp paprika
- 1 can diced tomatoes (400g)
- 1 cup beef stock
- 2 potatoes, chopped
- Salt and pepper to taste
- Sour cream (for serving)
Method:
1. Cook onion and garlic in a large pot until softened.
2. Add beef mince and cook until browned.
3. Stir in bell pepper and paprika, cook for 2 minutes.
4. Add tomatoes, beef stock, and potatoes. Simmer for 25-30 minutes until potatoes are tender.
5. Season with salt and pepper.
6. Serve with a dollop of sour cream.
