Beef Burgers on Sweet Potato Buns

Ingredients:
- 4 x Our Cow Grass Fed Beef and Bacon Burger Patties
- 2 large sweet potatoes
- Olive oil
- Salt and pepper
- 4 slices of cheese
- 4 cos lettuce leaves
- 1 tomato, sliced
- Sliced pickles
- 1 brown onion, sliced
Burger Sauce:
- ¼ cup mayonnaise
- 1 ½ tbsp tomato sauce
- 1 tbsp pickles, diced
- 1 tbsp brown onion, diced
- 1 tsp Dijon mustard
- Dash of pickle juice
Cooking instructions:
- Slice the sweet potato into thick rounds and add olive oil, salt, and pepper.
- Place in the air fryer at 180°C for 20 minutes, until tender and golden, flipping halfway through. (If using an oven, cook for an extra 10 minutes.)
- While the sweet potatoes are cooking, heat a frying pan to medium-high and add the sliced brown onion. Cook until browned, stirring occasionally
- Once the onion is cooked, remove it from the frying pan, add the Our Cow Grass Fed Beef and Bacon Burger patties, and cook for 4-5 mins per side, or until cooked through. Once they are almost cooked, add a slice of cheese to each patty, cover the fry pan with a lid, and cook until the cheese is melted.
- In a small bowl, mix all ingredients for the burger sauce.
- Assemble the sweet potato burgers with sauce, lettuce, tomato, burger patties, onion, and pickles.
