Beef Burgers on Sweet Potato Buns

Ingredients:

Burger Sauce:

  • ¼ cup mayonnaise 
  • 1 ½ tbsp tomato sauce 
  • 1 tbsp pickles, diced 
  • 1 tbsp brown onion, diced
  • 1 tsp Dijon mustard 
  • Dash of pickle juice 

Cooking instructions:

  1. Slice the sweet potato into thick rounds and add olive oil, salt, and pepper.
  2. Place in the air fryer at 180°C for 20 minutes, until tender and golden, flipping halfway through. (If using an oven, cook for an extra 10 minutes.)
  3. While the sweet potatoes are cooking, heat a frying pan to medium-high and add the sliced brown onion. Cook until browned, stirring occasionally
  4. Once the onion is cooked, remove it from the frying pan, add the Our Cow Grass Fed Beef and Bacon Burger patties, and cook for 4-5 mins per side, or until cooked through. Once they are almost cooked, add a slice of cheese to each patty, cover the fry pan with a lid, and cook until the cheese is melted. 
  5. In a small bowl, mix all ingredients for the burger sauce.
  6. Assemble the sweet potato burgers with sauce, lettuce, tomato, burger patties, onion, and pickles.
  7. Enjoy!
