Orange juice marinade:
Step 1
Combine orange juice marinade ingredients.
Step 2
Put chicken in large roasting tray.
Step 3
Pour half the marinade over the chook and a squeeze of honey over the whole thing. Add in your veggies to the tray. Cover with foil and cook in a moderate oven. Cook for 45 minuets per kilo of meat.
Step 4
About 15 minuets before its ready, pour the remainder of the marinade over the chicken. When its cooked, lift the chook and the veggies out of the tray to rest.
Step 5
Put roasting tray on the stove top and heat on medium temperature.
Step 6
Mix together a paste of butter and flour, whisk into the remaining marinade to make into a yummy gravy.
