Beef Massaman Curry

Ingredients:

  • 500g Our Cow Grass Fed Beef Chuck Steak
  • 1tbsp olive oil 
  • 1 brown onion, sliced 
  • ⅓ cup massaman curry paste 
  • 4 white potatoes, cut into 3cm pieces 
  • 1tbsp brown sugar 
  • 400 ml coconut cream
  • 1 cup of rice, uncooked

To serve:

  • Peanuts, chopped
  • Coriander 
  • Chilli, thinly sliced


Cooking instructions:

  1. Heat a frying pan over medium-high heat and add the olive oil. Dice the Our Cow Grass Fed Beef Chuck Steak into 3cm pieces. Add it to the fry pan and turn occasionally for 3 minutes, or until browned. Transfer to the bowl of your slow cooker. 
  2. Add the onion to the frying pan and cook for 2 minutes, or until slightly softened. Add to your slow cooker along with the potatoes, curry paste, brown sugar, fish sauce, and coconut cream. 
  3. Mix, cover with the lid, and cook on low for 7 hours or until beef and potatoes are tender. 
  4. Cook rice as per the packet directions. 
  5. Divide rice among the bowls, top with the beef, and garnish with chopped peanuts, coriander, and chilli. 
  6. Enjoy!
