Baked Salmon and Feta Pasta

Ingredients:

  • 2 x Our Cow Wild Caught Sockeye Salmon 
  • 200g feta cheese 
  • 2 large handfuls of baby spinach 
  • 1 punnet of cherry tomatoes 
  • 4 garlic cloves 
  • 2 tsp onion powder
  • Salt and pepper 
  • 3 tbsp olive oil
  • Juice of half a lemon
  • 2 tbsp basil pesto
  • 100 g fettuccine 
  • Grated parmesan, to serve


Cooking instructions:

  1. Preheat oven to 180°C
  2. To a large oven-safe dish, add the Our Cow Wild Caught Sockeye Salmon, feta, baby spinach, cherry tomatoes, garlic, lemon juice and seasonings. Drizzle with a generous amount of olive oil (about 3 tbsp). 
  3. Bake for 25 minutes or until the salmon is cooked and the tomatoes are tender. 
  4. Cook fettuccine as per directions until al dente, reserving ½ cup pasta water
  5. Add Basil pesto to the cooked salmon and mash everything together. Add the pasta and the reserved pasta water, then mix to combine. 
  6. Serve in bowls and top with parmesan cheese. Enjoy!
