Slow Cooker Herb and Garlic Lamb Forequarter Chops

Ingredients:

4 lamb forequarter chops

2 tablespoons olive oil

4 garlic cloves, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, chopped

1 onion, sliced

2 carrots, sliced

2 potatoes, diced

1 cup beef or lamb broth

1 cup red wine (optional)

Salt and pepper to taste

1 lemon, juiced and zested

Instructions:

Prepare the Chops:

Season the lamb chops generously with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat. Sear the lamb chops on both sides until browned, about 2-3 minutes per side. This step is optional but helps to develop a rich flavor.

Prepare the Slow Cooker:

Place the sliced onion, carrots, and potatoes at the bottom of the slow cooker.

In a small bowl, mix together the minced garlic, rosemary, thyme, parsley, lemon juice, and lemon zest.

Add the Chops and Broth:

Place the seared lamb chops on top of the vegetables in the slow cooker.

Pour the garlic and herb mixture over the lamb chops.

Add the broth and red wine (if using) to the slow cooker.

Slow Cook:

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the lamb is tender and the vegetables are cooked through.

Serve:

Once cooked, remove the lamb chops and vegetables from the slow cooker.

Serve the lamb chops with the vegetables and spoon some of the cooking juices over the top for added flavor.

Enjoy your tender and flavorful slow-cooked herb and garlic lamb forequarter chops!
