Cooking Tips
For the best crackling, pat the skin dry before cooking and season generously with salt. Start with a high oven temperature to help the crackling develop before reducing the heat to finish cooking the roast.
Preparation Instructions
Preheat oven to 240°C (220°C fan forced).
Place pork onto a roasting tray and cook for 40 minutes until the crackling begins to develop.
Reduce oven temperature to 200°C (180°C fan forced) and continue cooking for approximately 25 minutes per 500g, or until cooked through and the juices run clear.
Allow the roast to rest before carving.
