Our Farmers: Meet Harley Gibson from Hernani, NSW

Set across rolling country at Hernani in northern NSW sits “Camara”, a 4,000-acre beef operation managed by Harley Gibson. With wide open paddocks, carefully managed pastures, and cattle quietly grazing across the property, Camara reflects the steady, thoughtful approach Harley brings to both land and livestock.
Camara itself spans around 3,300 acres, supported by three smaller additional farms at nearby Macksville. Together, they form a productive and well-run beef enterprise that relies on a small hands-on team, currently with two employees and supported by contractors lending a hand during peak periods. It’s a scale that allows for efficiency while still keeping a close eye on every part of the operation.
Growing Up in the Beef Industry
Harley manages a predominantly Angus and Black Baldy herd, with some crossbred cattle also running across the property. In total, the operation runs around 750 breeders, with most of the progeny taken through to feeder weights.
Cattle husbandry isn’t just a job for Harley; it’s something he’s grown up with. Raised on a fifth-generation beef cattle property in the local area, Harley learned early on the importance of understanding animals, reading the country, and making decisions that support both productivity and long-term sustainability.
“I’ve always had a passion for the beef cattle industry,” Harley says. “I enjoy the cattle husbandry side of things, and the space and freedom that comes with farm work.”
Quality Beef, Done Properly
Harley’s vision for Camara is simple and grounded: to produce quality beef cattle in a productive and sustainable manner. That means well-maintained paddocks, healthy cattle, and a system that’s built to last.
What motivates him each day is the desire to run a first-class beef operation. For Harley, it’s about doing the job well, respecting the land, and ensuring the farm continues to perform year after year.
Why Harley Likes Working with Our Cow
For Harley, working with Our Cow aligns closely with his own values.
“I like their philosophy on providing ethically produced grass-fed beef to people who care about where their protein comes from,” he explains.
That shared focus on transparency and quality helps bridge the gap between paddock and plate, giving families confidence in the food they’re putting on the table, and farmers' confidence that their work is valued and respected.
Time Off the Farm
When Harley does get time away from the day-to-day demands of the farm, he enjoys spending it with his family, often camping or campdrafting and making the most of the outdoors.
And when it comes time to sit down for a good meal, his favourite cut is a classic T-bone steak, a fitting choice for someone who knows good beef inside and out!
We’re proud to work with Harley and appreciate the top-quality beef he produces for us here at Our Cow. It’s farmers like Harley who make it possible to deliver ethically raised, grass-fed beef, straight from the land to your plate.
You can try beef raised by Harley in your next Our Cow order, and taste the care and commitment that goes into every cut.
