What you will need:

  • 500g of our beef mince
  • 4 garlic cloves, chopped
  • 1 brown onion, sliced
  • 1 tbsp brown sugar (to caramelise onions)
  • 6 large & ripe tomatoes, quartered
  • 3 sprigs thyme/rosemary or both
  • Salt & pepper
  • Paprika or chilli powder for an extra kick
  • Brown sugar to taste, to contrast the acidity

Method:

Sauté onions on medium heat until starting to sweat & caramelise then add brown sugar

Toss in the garlic and sauté a little longer before adding in your beef mince

When the mince if halfway cooked, add the tomatoes and continue to mix

Add extra spices and your desired herbs, cover with an ovenproof lid and place in a 180 degree Celsius oven for 20 minutes

You can continue to let it cook on the stovetop if you’d like

Cook your chosen pasta until al dente in lightly salted water

Once your tomatoes are well cooked, take the pan out of the oven, stir and taste before adding salt, pepper & brown sugar

Toss your cooked pasta into the sauce and serve

 

Hot Tip
*Trust your tastebuds and if you have any Parmesan, Grana Padano or similar types of cheese, it will add some depth of saltiness to the dish. You can also add veggies to the sauce, grated carrots & zucchini are very palatable in it. Bolognese is great for meal prep too!
